Most things here that are poisonous tend to be Pokemon themselves, and Poison-types are common enough that every PokeMart I've been to thus far sells Antidotes, which is guaranteed to cure poison regardless of what Pokemon inflicted it-Pecha berries do the same, and have the added benefit of Pokemon actually being able to understand how they work. Unlike more traditional animals, all poison and venom here seem to have the same effects, so you don't have to worry about getting an antidote that's related to a specific Pokemon or attempting to figure out whether it's a neurotoxin or a hemotoxin or... something like that. The move Toxic results in poisoning that works more quickly, though I believe it behaves more like traditional poisoning if you switch your Pokemon out for another one.
I haven't really observed the universal poison's effects on humans, but it's completely nonlethal to Pokemon-the worst it can do is knock them unconscious. Then again, these things are absurdly resilient.

It varies from Pokemon to Pokemon really so it might take you a little while longer to figure out what makes yours tick. For example, I've got one that feeds off electricity so I have to let him stick near a socket every so often or else he grows weak.
As for the poisonous substances, the best you can do is carry antidotes. It seems as though it doesn't do more than make us sick as humans, but it can cause a Pokemon to black out. You'll likely want to pick up some more too because once your entire team blacks out, you're in real trouble.

So, you're interested in being a pokémon nurse? I'm sure that they'd like having someone who wants to learn that stuff. As for places to go... well, a lot of people who stay in Johto and don't end up going to Kanto tend to stay in Goldenrod City a lot. It makes sense, it's the biggest city in Johto, after all.
... Anyway, keeping your pokémon healthy is the same as any animal. Make sure you know what they eat, don't let them eat anything bad for them, and if you have one that's really, really eager to fight don't let it over do things. No matter how much they protest that.
